Happy Father's Day to one and all! Our family is so blessed with wonderful fathers, grandfathers and great-grandfathers alike. We celebrated the "Superdad" in our home with some standard favorites--granola for breakfast, steaks for dinner, and power tools as a bonus. We sent out a new favorite granola recipe to the dads we love and it was a hit. If you want to try it out too--please do so and enjoy!
Granola
13 cups old-fashioned oats
2 cups wheat germ
1 cup flax meal
4 cups slivered almonds
4 cups cashews
3 cups shredded coconut
1 1/2 cups dark brown sugar
1 1/2 cups maple syrup
1 cup coconut oil (or other vegetable oil)
3 tsp salt
4 cups crasins (opt.)
Preheat oven to 250 degrees F. In a large bowl, combine the oats, wheat germ, flax meal, nuts, coconut and brown sugar. In a separate bowl, combine the maple syrup, oil and salt. Combine both mixtures and pour onto two greased cookie sheets. Cook for one hour and 15 minutes, alternating top and bottom stove positions and stirring every 15 minutes to achieve an even color.
Remove from oven and transfer into a large bowl. Add crasins and mix until evenly distributed. Allow to cool and store in airtight container.
